Santos [Pacamara ASD lot #38]
Tasting Notes
Description
Santos Café Panama is the story of the Lezcano family, five generations of passionate producers established since 1947 on the volcanic lands of Panama. Their finca spans 55 hectares between 1,100 and 1,400 m in altitude, with a new, higher-altitude plantation, La Mimada, benefiting from a cool climate and rich soils. Their work is based on family tradition, agronomic expertise, and artisanal attention given to each harvest. Among their exceptional coffees, this Pacamara stands out with a 72-hour anaerobic slow dry fermentation, which develops a profile that is both vibrant and gourmet. In the cup, there is a brilliant acidity accompanied by fruity and exotic nuances resulting from the fermentation, carried by intense red fruits, ripe banana, and a chocolatey and smooth finish. A rich sensory experience, combining complexity and sweetness for a unique Panamanian terroir coffee.
