Description
In the cup, Rumudamo Natural expresses itself with a vibrant fruity acidity, dominated by notes of blueberry and blackberry, balanced by a pleasant sweetness and an elegant cocoa finish. A complex and refined coffee, capable of enhancing all the richness and tradition of the Sidama region. Rumudamo Natural is a specialty coffee from the Sidama area, in Ethiopia, cultivated at 2,200 meters above sea level by over 600 small producers who deliver their cherries to the Rumudamo washing station, managed by Asefa Dukamo Korma. The predominant variety is 74112, selected for its resistance and cup quality. The coffee is processed using the natural method: ripe cherries, hand-picked, are carefully selected and placed to dry on raised African beds, where they are turned regularly to ensure uniform drying. This method, made possible by the cool and ventilated climate of the plateau, intensifies the fruity sweetness and gives the coffee great aromatic complexity.
