Granja Paraíso 92 is a family-owned coffee farm located in Piendamó, Cauca, Colombia. Recognized for its innovation and excellence, this farm combines advanced cultivation methods with a deep respect for the Colombian coffee tradition. Led by Wilton Benítez, Granja Paraíso 92 has managed to position itself as a world leader in the production of Specialty Coffee. The farm is dedicated to the cultivation of exceptional varieties such as Java, Bourbon Rosado, Geisha, Pacamara, Tabi and Castillo. These varieties are produced using innovative systems such as terraces, drip irrigation and nutritional calculations carried out in a laboratory, ensuring the quality and uniqueness of each bean. In addition, Granja Paraíso 92 has its own microbiology laboratory, quality laboratory and processing plant. The advanced process begins with a meticulous selection of coffee cherries, choosing only the ripest ones to ensure optimal flavour. These cherries then undergo a controlled fermentation process, in which specific microorganisms, such as yeasts and lactic acid bacteria, are introduced. These microorganisms are carefully selected for their ability to bring out the fruity and floral notes of the coffee, while contributing to a balanced acidity and smooth body. During fermentation, key factors such as temperature and pH are continuously monitored to ensure the process is proceeding as intended. This careful control allows the unique flavours of each coffee variety to fully develop. After fermentation, the coffee is dried in a controlled environment. This step is crucial to preserve the delicate flavours developed during the process. The drying method used is energy efficient and sustainable: the water extracted during drying is reused to wash the coffee and clean the equipment, thus conserving valuable resources.
