In 2017, Luis and his wife Georgiana began operating La Isla farm with the dream of producing the highest quality coffee in harmony with nature. Although the farm is less than 10 years old, it has proven its unparalleled skill and expertise by winning the Costa Rica CoE four times since 2020. In particular, the farm owner, Luis, based on his past career as an agricultural scholar, plants new coffee trees every year and spares no research and investment in coffee varieties and processing methods. This year's CoE 6th place winning SL 28 variety is also a coffee variety representing Kenya, but in the hands of this couple, it has been reborn as a coffee with Costa Rican characteristics. The coffee cherries, which slowly ripen while retaining sweetness and acidity in the terroir of the farm located at 1,560m above sea level, are carefully selected by the couple's meticulous hands. The harvested coffee is washed with clean water on the same day, defective beans and unripe cherries are sorted out, and then slowly dried for 21 days in the cool air of the high-altitude region. This coffee, meticulously processed by turning it over three times a day on African beds, harmoniously expresses the balance of sweetness and acidity like a piece of orchestra. Experience the deep and distinct flavor of specialty coffee in this cup, which contains the passionate efforts of Luis and Georgiana. A beautiful landscape created by their two young daughters, Elena and Milena, playing in the farm, is also infused into this cup of coffee. Coffee beans, as agricultural products, have different flavors depending on the cultivation environment. Good quality beans are only completed when farmers meticulously manage all processes from seeding to processing and drying.
