A delicate, fruity and floral coffee, a faithful reflection of the excellence of the Panamanian terroir and the demanding vision of its producer. Produced by Jamison Savage in Panama, this coffee undergoes carbonic maceration followed by washed fermentation. Carbonic maceration involves placing whole cherries in a stainless steel barrel and leaving them to rest in an environment rich in carbon dioxide. This processing method allows us to develop a refined aromatic complexity while preserving a beautiful clarity on the palate.
