Heiner Lasso comes from a dedicated family of coffee producers in San Adolfo, Huila. Over the years, they have overcome significant challenges including a devastating fire that forced them to abandon their farm. Thanks to their father’s (Wilder Lazo) determination, they returned, rebuilt the land, and revived their coffee production from the ground up. Coffee is a family affair: Wilder’s mother finds joy in gardening, while his siblings specialise in different areas like drying, processing, and commercialisation. Together, they’ve transformed their farm into a hub for exceptional specialty coffee, known for its unique flavours and aromas. Their shared commitment has not only sustained the business but also provided education and a better future for the next generation. Today, the entire family carries on this legacy with pride. Heiner, in particular, is highly regarded for his deep knowledge of coffee genetics and post-harvest processes. He focuses on bringing out the distinct characteristics of each varietal through careful fermentation and processing techniques. Heiner’s father Wilder recently joined the El Placer Farms Project, led by his close friend Sebastián Ramírez, to build a stronger connection with the roasters and coffee lovers who enjoy their beans. His story is a powerful example of perseverance, passion, and the strength of family. The coffee is process through selection flotation then fermented in tanks with CO2 for 24 hours. Then Pulped, washed and dried slowly in parabolic beds.
