Country of Origin: Ethiopia Variety: Gibirinna 74110 & Serto 74112 Process: Anaerobic Natural Altitude: 2000 masl Produced by Sookoo Coffee, owned by Ture Waji, this lot comes from the Suke Quto kebele in Shakiso, Guji, Ethiopia. Grown at 2,000 - 2,200 masl, it features Gibirinna 74110 and Serto 74112 varieties. The coffee underwent an anaerobic natural process: cherries were sorted, sealed in oxygen-reduced plastic containers for 72 hours, then dried on raised beds for 25 days. Sourced from around 35 smallholder farmers, this lot is clean, fruit-forward, and shows distinct deep red, floral complexity. We chose this coffee for it's intensity, with a similar lot, which has undergone an anaerobic 'wine' process, available in-store as our house coffee. You can expect flavour notes of peach, forest fruits and rosehip.
