Las Flores — Chiroso, Colombia This coffee comes from the Las Flores farm, located in the Nariño department, Colombia. The farm is managed by Joan Vergara along with his brothers, who are known for their experimental processing methods and work with rare coffee tree varieties. The lot features the Chiroso variety — a varietal distinguished by its elongated bean shape, resistance to coffee rust, and ability to reveal a complex flavor profile. Grown at an altitude of 2000 m above sea level, this coffee acquires a rich mineral composition due to volcanic soils and the unique microclimate of the region. The processing is natural, but with a special feature: the cherries were dried in the shade, which slowed down the process and allowed for a more complex flavor to develop. This decision emphasizes natural sweetness, creating a deep and multifaceted cup profile. Expect a taste with bright acidity, rich sweetness, and an elegant structure.
