At Quebradita Farm in Oporapa, Edinson Argote gives this classic variety a contemporary twist. His version, dubbed "Advanced Natural," is the result of meticulous small-batch processing working with just 80 to 100 kg of cherries at a time. Each batch undergoes a double fermentation, beginning with 72 hours of controlled anaerobic fermentation. Once partially dried to 20% humidity, the coffee is rehydrated with a special yeast culture for four days, enhancing clarity, sweetness, and structure. The drying process then continues over 76 hours at an average of 40°C, preserving the vibrancy and balance of the final profile. The result is a wildly expressive SL-28 bursting with layered fruit and florals.
