Jesús "Chungo" Galeas owns La Falda, a four-hectare farm in San Miguel de Selguapa, Comayagua, Honduras, at 1,700 meters altitude. Since taking over in 2014, Jesús has become a key figure in the community's move towards specialty coffee. With experience from IHCAFE, he encourages neighbors to adopt higher cultivation standards. During harvest, a team handpicks ripe Bourbon cherries, which are floated, depulped, and fully washed before drying on raised solar beds. La Falda symbolizes Honduras' shift to quality-driven farming, sustainability, and the rich potential of its terroir.
