Fredy masters both the production of large lots and microlots, and every stage —from harvesting to processing— is carried out with utmost care to guarantee maximum quality.</p> <p data-start="516" data-end="1061">His focus is always on the sustainability of the farm. He actively protects the diversity of trees: grevillea and cuje predominate, but he also preserves fruit trees and native species. Soil management includes the application of composted organic materials —such as leaves, branches and coffee pulp— to maintain its fertility. The farm hosts a wide variety of native birds and animals, and Fredy explains that it is not even fenced, so that, as in nature, creatures can enter and leave freely.</p>
