In the Cajamarca region, specifically in the Jaén province, is the Cooperativa Agraria Selva Andina, an organization founded in 2015 that works with over 495 members distributed across the coffee-growing areas of Cajamarca and Amazonas, in northern Peru. Guided by the values of solidarity, responsibility, respect, and honesty, the cooperative promotes the sustainable development of its associated families and the care of their environment. With altitudes ranging between 1,500 and 2,018 meters above sea level, the farms of the 57 producers in localities such as La Capilla, Cumba, and Yamon produce exceptional coffee, cultivated according to an agronomic management plan supervised by the cooperative's Technical Advisory area. These plots cover a total of 1,050 hectares of coffee production, where varieties such as Catimor, Bourbon, and Typica are grown. The production process begins with a manual and selective harvest during the months of August and September, an activity carefully documented in each producer's logbooks. The pulping of the coffee, which involves removing the husk or pulp, is carried out on the same day of harvest using manual, motorized, or electric pulpers. Subsequently, the beans undergo a controlled fermentation process in tank-type vats, lasting between 12 and 30 hours depending on factors such as ambient temperature and bean ripeness. After fermentation, the beans are washed with clean water, with up to three washes performed to ensure their quality. Finally, drying is carried out in solar dryers, reducing the bean's moisture content to 12%. This process ensures the preservation of the coffee's unique attributes. Selva Andina coffee stands out for its enzymatic honey fragrance, a chocolatey base with notes of honey, caramel, and nuts.
