Description
Almost one decade since we first started working with Las Lajas. Located in Central Valley in Costa Rica, nearby the village Sabanilla de Alajuela, the farms comprise 73 ha and lie at 1350 to 1500 masl, on the slopes of the Poás volcano. The climate is determined by Atlantic weather patterns which prove excellent for coffee cultivation. Francisca and Oscar Chacón, the owners, have been producing coffees organically since the beginning. They used to be certified but because this recognition comes at a huge expense, they decided to let the certificate lapse and continue without. Their operation however has not changed since and the Las Lajas farms are chemical free, all pulp compost is repurposed as fertilizer and water use is measured and limited. Coffee is handpicked and sorted through floating in a Penagos sorting machine, which re-uses its water, depulped and dried on beds with the mucilage left on until a dark brown crust is formed - black diamond. The coffee is flipped rather than raked for even drying. Sourced through our importing partner Falcon Coffee.
