Alejo, the fifth-generation descendant of the Castro-Kahle family, continues a century-old tradition of coffee farming on the slopes of Poás Volcano in central Costa Rica. Today, the family upholds strict quality standards while expanding natural rainforest conservation efforts to enhance biodiversity. The estate also implements measures to reduce air pollution and combat global warming. About Villa Sarchi: Villa Sarchi (also known as La Luisa or Villalobos Bourbon) is a natural dwarf mutation of Bourbon coffee, discovered in the 1950s–60s in Alajuela, Costa Rica. It thrives at high altitudes and withstands strong winds. About Process: This lot represents Alejo’s daring approach to fermentation. The coffee cherries are harvested from the Lima plot (shaded by native rainforest trees) at optimal ripeness, measured by Brix levels. After floating and washing, the cherries undergo a 5-day fermentation in tanks under direct sunlight (25–30°C) during Costa Rica’s dry season. They are then dried on raised beds for 11 days and finished with an 8-hour slow drying in mechanical dryers. About variety:H1 Centroamericano (T5296 × Rume Sudan)Centroamericano is an F1 hybrid developed from the rust-resistant variety T5296 crossed with the Ethiopian landrace Rume Sudan. Released in Central America in 2010, this variety exhibits exceptional disease resistance and high yield. When cultivated at high altitudes with proper management, it also delivers outstanding cup quality, making it one of the very few commercially available F1 hybrids today. H3 (Caturra × Ethiopia E531)H3 is an early-generation F1 hybrid bred from Caturra and the Ethiopian landrace E531, developed through a collaboration between CIRAD, CATIE, and PROMECAFE. Although it did not advance to final selection, it is recognized for its excellent cup profile. As one of the pioneering F1 hybrids, H3 contributed to enhancing genetic diversity in Central American coffee, offering advantages such as high productivity and vigorous plant growth.
