The rich volcanic minerals and the large temperature difference between day and night give the cherries a rich sugar and aromatic content. In contrast to anaerobic fermentation, the process involves intentionally creating an oxygen-rich environment, adjusting the amount of oxygen and airflow, By controlling the air the cherries come into contact with, we are able to delicately manipulate oxidation, creating a unique aroma and texture in the final cup. The taste is juicy like an American cherry. It also has a fruity flavor reminiscent of mandarin orange, which will captivate anyone who drinks it.
