The result of the Dark Room Natural processes is a range of coffees that exhibit unparalleled cleanliness and complexity of flavour, offering a distinctive sensory profile compared to traditional natural coffees or other drying methods. El Mirador Farm, nestled in the beautiful region of Huila, Colombia, is renowned for its exceptional coffee production. Located in the municipality of Palestina, this farm stands out for its meticulous cultivation practices and dedication to quality. With a rich array of varieties including Caturra, Tabi, Catuai, Orange Bourbon, Striped Bourbon, and Geisha, El Mirador Farm boasts over 18 years of experimentation and refinement in coffee production. The farm operates on two harvest cycles: the Mitaca harvest from May to July and the main harvest from September to December. One of the farm's notable processes is the Dark Room Natural, designed to optimize drying conditions. By incorporating dehumidification equipment and fans, this method ensures a controlled environment, allowing for continuous drying day and night. With a focus on short fermentation periods of 36-48 hours, coffees undergo careful disinfection before drying, ensuring the expression of the terroir and the variety's genetics.
