Our fourth Peru release of the season and this is a another special one from Cajamarca via importer Chacra Coffee. This is a washed Etiope (Ethiopian heirloom) variety with minimal 'intervention', reflecting the care and attention given to a classic variety of Arabica. A purists coffee for sure and one we've roasted with a nod to the filter lovers...short and light. Nelber is a third-generation coffee grower from El Paraíso, Huabal. He is one of four brothers, all of whom are coffee farmers. They learned the trade from their grandfather and father. Nelber helped with coffee-related tasks from a young age, learning everything from his father. Over time, Nelber became interested in owning his own farm and invested in an area he named “El Laurel” in 2007. Later, in 2017, his father passed down a plot called “La Guaba” as part of family tradition. After achieving good results from these farms, Nelber was able to acquire a new plot in 2022, which he named “El Ciprés”. Like many farmers, Nelber began cultivating typical regional varieties such as Catimor, Catuaí, and Nacional. But through his work with Chacra Coffee, he grew more interested in exploring new varieties and cultivation methods. He reinvented his farm with Etiope, Java, Geisha, Marshell, and Bourbon varieties. This clean and delicate washed coffee begins with selective harvesting of ripe cherries, then ferments them for 18 to 72 hours. After pulping, the coffee ferments again for 36 hours, followed by washing and drying in a solar dryer for about 10 to 20 days, depending on the weather. Once the coffee is dry, it is stored it in bags to preserve the quality of the parchment coffee. NOTE: This is roasted light and fast intended for filter brewing methods. Brewing for espresso would require some adjustments to the standard brewing ratios, temperature and pressure to achieve a balanced cup.
