Jaguara is Brazilian coffee with character — sweet, dense and outrageously fruity. In the cup, it reveals an unusual pairing of wild strawberry and pineapple, lifted by a deep note of muscovado sugar. It has the reassuring solidity one expects from Brazil, yet it isn’t afraid to show its edge. Fazenda Jaguara is located in Campo das Vertentes — a region once known for its gold mines, today rediscovered for another coveted treasure: coffee. Established in 2001 by a group of agronomists, the farm is now run by André and Natália, who continue to develop it with a modern and environmentally conscious approach. In recent years they have reduced the use of chemicals by 80%, strengthened biodiversity and introduced beekeeping as a living indicator of clean cultivation. Jaguara is part of a broader Brazilian movement of producers proving that quality and sustainability are a remarkably good match. This is also where it breaks away from the classic Brazilian profile. Instead of the familiar chocolate and nuts, we find a fruit-driven expression, enhanced by 48 hours of anaerobic fermentation in barrels. The result is a coffee that gains intensity, vibrant and full of energy, yet always balanced. Brazil in this guise is not only a giant of volume, but also a source of innovation shaping the world of specialty coffee.
