Why you might like it. A coffee we define as balanced because from a taste perspective, a great synergy reigns between acidity, sweetness, and bitterness. An initial medium-high acidity reminiscent of the citric acidity of orange, then evolving on the taste buds into sweetness where the sensation of ripe peach and apricot emerges. A slightly bitter finish with notes of creme caramel, but certainly very pleasant and desirable, giving it a 'wow' effect in the cup. Medium-low body, certainly a coffee that enhances its potential in a filter brew. This washed Ethiopia also meets initial expectations, a coffee I would define as an everyday coffee, without having to put too much effort into tasting and always drinking with the awareness of an excellent coffee. The great secret of this elegance and sweetness in the cup is due to an innovative processing method carried out by the farm owner: we are talking about a young man, Mikiyas, who wanted to experiment with this new processing method, placing previously dried cherry skins into the tank along with water during the fermentation phase for a controlled fermentation time. After endless tests, he managed to create a coffee with a 'wow' effect; this is where this cloying sweetness comes from... for those who love sweet coffees, this is the TOOOOOOOP.
