Jamison Savage, known for pioneering methods at Finca Deborah, Iris Estate, and Savage Coffees, excels in progressive processing techniques and sustainable farming. His coffees, frequently chosen by national and world champions, highlight natural sensory nuances. Jamison, with Sasa Sestic and Elvin Chin Wei, founded Iris Estate in the Volcan region, believing its extreme elevations offer ideal conditions for 'super-specialty' coffee. Panama Geisha cherries from Iris Estate sweeten slowly in cool, high-altitude temperatures with optimal shade and sunlight. The Symbiosis process begins with harvesting perfectly ripe Geisha cherries (21-24 BRIX), followed by double sorting and 100+ hours in hermetically sealed, stainless steel tanks with temperature and pH monitoring. Cherries are then dried for about 30 days on Jamison's three-tiered, raised African beds, with careful control of temperature, humidity, and airflow to prevent undesired microbial activity and promote flavor development. After reaching ~11% moisture, coffee is stored in Grain-pro for a critical reposo (seasoning) phase, stabilizing moisture and enhancing flavor before hulling and final sorting. Panama Geisha, including the Green Tip variation, is prized for its sweet florality and citrus. Its debut win in 2004 captivated the specialty coffee world, leading to its frequent use in competitions and high prices.
