The farm’s owner, Jamison Savage, is widely known for pioneering the use of carbonic maceration—a fermentation technique borrowed from winemaking—into coffee processing, opening a new chapter in the world of specialty coffee. The Apocalypse lot we’re introducing today showcases one of Finca Deborah’s most experimental processing methods, using Koji (a type of fermentation mold) during fermentation. Through this innovative Koji fermentation, you can experience the exotic expression of Finca Deborah’s unique terroir, the distinctive character of the Geisha variety, and an intriguing, silky texture — all in a single cup.
