Description
The Sky Project is dedicated to discovering coffees grown closer to the sky, cultivated at higher altitudes. As climate change makes it increasingly difficult to maintain ideal growing conditions at lower elevations, we have been working with our partner producers to seek out coffees from regions where greater temperature differences between day and night allow the cherries to ripen more slowly, developing a deeper and more refined flavor profile. Eternity comes from Alo Station, operated by Ethiopian producer Tamiru Tadesse. Rather than relying on complex processing, this coffee was crafted to express its inherent elegance and purity. After removing the cherry pulp, the beans underwent a two-day fermentation, followed by 14 days of drying on African beds and an additional 22 days of slow drying in a cool environment, completing a carefully controlled two-stage process. Delicate notes of violet and lavender unfold first, followed by the clean and transparent flavors of peach, lychee, and orange. As its name suggests, we hope the beauty of this washed coffee lingers — a taste meant to be remembered. aery's comment Aery appreciates the diverse flavors that coffee can express. To allow those flavors to feel clean and vibrant, we roast our coffees lightly, focusing on clarity rather than intensity. Since coffee needs time to reach its optimal brewing state, we recommend brewing about 10 days after the roast date for the best experience. For brewing, we use a ratio of 1:17–18 (coffee to water) to achieve a cup that feels balanced and expressive without being too strong.
