In the cup we also get malic acidity reminding us of juicy pears with a sweet finish that reminds us of blue gummies. \n\n## About The Producer\n\nBefore the government made it possible for smallholders to obtain export licenses, both Basha and his father sold their cherry to the cooperative. Basha now has his own export license and grows coffee (primarily 74158, known locally as “Walega”) in semi-forested plots on 12 hectares in addition to operating collection sites in Bombe, Shantawane, and Kokose—collecting cherry from producers growing coffee as high as 2300 masl. Basha has recently received a de-pulper due to the help of Crop to Cup, allowing unique new coffee processes like this one. \n\nA family man—he has 11 children with his two wives—Bekele Belaycho operates his farms and drying stations with the help of his family. His son, Beleteno, who graduated this year from Hawassa University with an economics degree, manages his Hora Ganet farm (which means “Spring Paradise”). Between his farm in Bombe and a smaller, 5 hectare farm in Kokose (with its own drying station), Bekele purchases cherry from more than 100 smallholders, producing a total of 1.5 containers of coffee. Like many collectors in Ethiopia, his bottleneck, with cherry prices as high as they are, is financing. Bekele is a connector and a consummate professional—an ideal partner, willing to engage with every idea for improving his coffee and helping his community. \n\n## Processing\n\nAfter harvest this coffee is pulped immediately, keeping a layer of mucilage in tact and drying on raised beds under shade with close examination.\n\n## Variety\n\nThe Jimma Agricultural Research Centre (JARC), one of Ethiopia’s federal agricultural research centers, approved the release of 74158 in 1979. In the year 2011, he won the prestigious Cup of Excellence competition. In 2018 Don Cayito geisha set the highest price per pound of green coffee ever sold in the Costa Rican coffee market. Currently, the Calderón family owns 15 farms. Ricardo´s two sons (Majkl and Diego) and two daughters (Liseth and Fernanda) help with all aspects of coffee farming. Their highest elevation farm Don Cayito is managed by Diego. Most of the coffee cherries are processed using Colombian Penagos eco-pulpers. Drying is either on traditional concrete patios or African beds. Parchment is usually stored in huge jumbo bags. Fernanda currently takes care of the newly built coffee shop, roastery, pastry shop and training center, which all bear the name Don Cayito. The coffee shop quickly became a destination spot not to miss when travelling in the Tarrazu region. There is also an amazing view of the Don Cayito farm directly from the shop. Nowadays, you can find the real geisha variety in many places in Costa Rica. But be aware, most of the time the geisha you get from the local farmers is actually a nicer version of typica variety (so called typica mejorada). Typica mejorada reminds you of geisha variety so much (with its flavours and shape) that it has started being called geisha too. The Calderon family purchased their geisha seeds from CATIE research center, which can guarantee their pedigree. The seeds have the typical elongated shape that we recognize from the classic geishas from Panama. This is our first purchase from Santa Teresa 2000 from Tarrazu, Costa Rica. It's been a while since SL28 in Latin American countries have become popular but still hard to find a lot that would represents the SL28 flavors well so when we cupped this coffee, we all got blown away by its well structured flavors.

In the cup, the fruitiness (juiciness and tartness) of the SL28 cultivar is perfectly displayed while it has bright and elegant character as a Tarrazu high grown coffee. Expect sweet Japanese cherries with delicate jasmine florals and bright flavors of white wine and grapefruit.

Through these initiatives, Finca El Placer stands as a model for integrating community development with environmental conservation in the coffee industry.\n\nThe Variety\nGesha (or Geisha) is a prized variety that often fetches high prices due to it’s unique and delicious flavour profile. The variety gets it’s name from the Gora Gesha village in Ethiopia where it originated from before it was taken to Costa Rica as part of a research program in the 1950’s. In Costa Rica it was found to have good resistance against Leaf Rust and so was taken over the boarder to Panama for cultivation there too. Initially Gesha was unsuccessful in Panama due to lack of altitude. However, fast forward to 2004 and after some experimenting, Gesha finally made a name for itself when it broke records by selling for a whopping $770 per kg!\n\nEver since that famous lot that was produced by Hacienda la Esmeralda in 2004, Gesha has been a desirable variety. While not all Geshas have the same quality and cup profile, good ones often exhibit high sweetness, very clean cup and floral notes like jasmine, coffee blossom and black tea.\n\nThe Process\nAfter picking, ensuring 95% are fully ripe and 5% are semi-ripe, coffee goes through a meticulous white honey process that enhances its delicate flavour profile. These cherries undergo a 48-hour anaerobic fermentation in 200-liter tanks at a controlled temperature of 18°C, with CO₂ injection and submersion in water with an oxygen pump to promote specific fermentation dynamics. After fermentation, the cherries are pulped and lightly washed, leaving some mucilage on the parchment. The beans are then dried in two phases: first, under shade netting at 40°C and 25% humidity for approximately 20 days, followed by additional drying in a parabolic dryer for about 5 days. This slow and controlled drying process ensures the beans reach an optimal moisture content of 9–11%.
