Description
Chorora is owned by Olinka Velez and is the sister farm of Yambamine. These farms are located next to each other on a steep hillside surrounded by primary cloud forest and crossed by the old ‘Inca Road’ that once connected Cuzco with Quito. The land has stunning views towards the valley of Macara and Peru on the horizon. Chorora which means ‘water well’ in Kichwa and Yambamine, which means ‘land of gold '. This varietal was obtained from the Nestle experimental breeding farm through Olger Rogel. Olger is known for being the first person to plant the Sidra variety commercially and he is the most trusted source for seeds of this variety. Olger named this Heirloom ‘Lupe Maria’ after his daughter and that’s how it is known in Chorora and other farms in Ecuador. The Coffee Washed, double anaerobic fermentation. (Red Washed) As soon as the cherries arrive at the processing station, these go on through 72 hours of carbonic maceration with lactic acid bacteria cultivated from mosto. The cherries are then partially washed, leaving some mucilage on the parchment. The coffee is then placed inside tanks once again where it goes under a second carbonic maceration(anaerobic fermentation) for 72 more hours. After this fermentation, the parchment comes out with a reddish tint on it, hence the name ‘Red Washed’. Finally, coffee is washed and laid onto African beds for controlled drying until it reaches a humidity of 10%.
