In the heart of Panama City, Lost Origin was born from a simple idea: to rediscover coffee by exploring its deepest origins. Founded by a team of enthusiasts blending the art of coffee with the experimental spirit of craft breweries, the laboratory has become a true workshop for sensory innovation. Each year, Lost Origin travels through the mountains of Boquete in search of the best cherries. These high-altitude coffees are then processed in their lab, where science meets creativity. Fermentations are carried out in custom-made tanks, at controlled temperature and humidity, under the watchful eye of specialists who ensure every detail is perfect. The result is lively, expressive, and bold coffees, creations that reveal the richness of the Panamanian terroir while pushing the boundaries of tradition. This exceptional lot, harvested on February 18, 2025, comes from the Navarro family and the Geisha variety, grown at an altitude of 1,300 meters. After meticulous pulping, the beans fermented for 13 days in specially designed stainless steel tanks, according to LOY-011P and LOY-006P protocols, at an average temperature of 8.5 °C. The coffee then dried slowly over 20 days in rooms with controlled temperature and humidity, ensuring perfect grain stabilization. The result: an exceptional Geisha, with vibrant notes of grapefruit, lemongrass, and white wine. On the palate, it reveals a lively and elegant acidity, a silky texture, and a long finish, both floral and slightly zesty. A true expression of the Panamanian terroir enhanced by Lost Origin's expertise.
