Description
This coffee from the Granja la Esperanza farm offers a cup full of sweetness and complexity, with notes of cherry liqueur, pineapple and passion fruit, a creamy body and good acidity on the finish. A complex coffee, combining intensity and velvety smoothness. Description of the fermentation process: For green coffee fermentation, only the ripest coffee cherries are hand-selected and immersed to filter out the lighter, less flavorful Whole Beans . After measuring their natural sugar content, they are carefully fermented in GrainPro bags for 70 hours. With gentle rotation every 5 hours, each cherry absorbs its aromatic essence, sublimating its natural acidity and fruity notes. The cherries then undergo 3 days of mechanical drying at a controlled temperature of 38 to 40°C. They then complete their natural drying on raised boards for 12 to 15 days, developing richness and complexity.
