**Producer - Jairo Arcila** **Origin - Colombia** **Process - Natural** **Varietal - Yellow Sudan Rume** **Altitude - 1400-1450 MASL** **Flavour Notes - Tropical Fruits, Honeydew Melon and Lime** **Farm** Jairo Arcila and his team selectively harvest only the ripest cherries, which are then hand-sorted and floated at Villarazo to remove defects. The cherries are transported in GrainPro bags to La Pradera processing center to preserve freshness. Upon arrival, they undergo a second floating stage using recycled water, which is later filtered and safely released through a vetiver grass filtration system, ensuring sustainable water management. After a final hand-sorting, the cherries are subjected to a 45-hour aerobic fermentation, enhancing their complexity and flavor. They are then dried on raised beds for 8-12 days, turned regularly for even drying. The target moisture content is 9.5%-11%, supported by greenhouse conditions ranging from 20-38°C. **Varietal – Sudan Rume** Sudan Rume is a rare landrace variety from South Sudan, valued for its genetic diversity and exceptional cup profile. Grown at Jardines del Edén, it offers vibrant floral notes, tropical fruit flavors, and tea-like body produced in very limited quantities.
