FARM Zhao Xin is a leading figure in China's specialty coffee industry and the founder of Happenstance Coffee. Widely respected as a coffee processor, coach, and mentor, she has played a key role in elevating Chinese baristas to the global stage, coaching national champions who excelled at the World Barista Championship and World Brewers Cup in 2019, 2021, and 2023. Zhao is a certified Q-Grader with the Coffee Quality Institute and an Authorised Trainer with the Specialty Coffee Association (SCA), qualifications that reflect her deep expertise in coffee quality and professional training. She serves as a sensory judge at major competitions, including the World Barista Championship, World Brewers Cup, and China’s sections of the World Coffee Roasting and Coffee in Good Spirits Championships. She has also judged internationally at Colombia’s Land of Diversity competition and regularly evaluates top beans at the Yunnan Green Coffee Bean Competition. In addition to her judging and coaching work, Zhao founded Yunnan Happenstance bsp; Coffee, a green coffee production and trading company that supplies high-quality, competition-grade beans and offers custom processing services. Her contributions have significantly shaped China's presence in the global coffee scene. PROCESSING: Only fully ripe red cherries are harvested and placed in bags, with the temperature controlled below 28°C for high-temperature anaerobic fermentation for 72 hours. Afterward, the cherries are spread on drying racks until the moisture content reaches 30%. They are then placed back into bags for a second high-temperature anaerobic fermentation for 120 hours. Following this, the cherries are dried on racks again until the moisture content drops to 12.5%. Finally, the beans are stored in a warehouse to rest for 4 weeks.
