Description
Producer - Johan and Diego Vergara, Las Flores. Origin - Colombia. Process - Natural. Varietal - Java. Altitude - 1750 MASL. Flavour Notes - Haribo Giant Strawberries, Cola and Jelly Cubes. Finca Las Flores was established over 30 years ago by Edilberto Vergara and Nubia Ayure, starting with 16 hectares dedicated to coffee cultivation. Following Nubia’s passing in 2012, their sons, Johan and Diego, took over the farm and introduced innovative methods in both cultivation and processing. Today, the farm produces a range of exceptional coffee varieties, including Tabi, Red Bourbon, Java, Maracaturra, Pink Bourbon, Gesha, and Caturra Chiroso. Johan leads the development of fermentation and processing techniques to enhance cup profiles, while Diego manages production, fermentation, and drying to ensure consistency and quality. Their processing method begins with selecting cherries at 24–28 Brix. Thermal shock is applied at the cherry stage, followed by 60 hours of anaerobic fermentation, 12 hours of oxidation, and 24 hours of submerged anaerobic fermentation. A final thermal shock is applied at 55°C for 30 minutes. No cold water flotation or leachate recirculation is used. Drying is carried out mechanically using a dehumidifier machine over a period of 60 hours. This careful approach ensures stable, repeatable quality and distinctive flavor characteristics.
