Senel Campos Valverde is a third-generation coffee farmer who operates Don Senel Micromill with his son Allan, at the family farm (Finca La Toboba). The farm has been in continuous family operation since his father planted the first trees in 1968 on land inherited from Senel's grandmother. Don Senel is intensely quality focused, growing a range of cultivars with exceptional processing. This Gesha is super sweet, tropical and stonefruit-y with soft florals throughout. Process: Slow Dried Natural - Ripe cherries (minimum 25 Brix) are harvested, floated, and graded for uniform density. They are moved to raised beds for 3 days of continual hand sorting, then to a greenhouse with shade netting for a slow drying process (30-40 days). Post green-house drying, cherries are stored in grain-pro in a cool warehouse for a 2-3 month reposado for stability. Vacuum packing at the mill ensures optimal quality stability. The Story: Don Senel Micromill operates in Costa Rica's Brunca region, processing coffee from Finca La Toboba, Las Huacas, and El Cola Roja, located on Chirripó mountain slopes. The operation exemplifies Costa Rica's micromill revolution, employing scientific processing methods like pH monitoring and Brix measurement. Cultivation emphasizes agroforestry with native shade trees, reducing herbicide use by 85%. Finca La Toboba's microclimates allow for varied cultivation.
