In the highlands of western Guatemala, Finca Las Gardenias spans 15 hectares of lush, mountainous terrain. At the heart of Eddy Lopez’s work is a deep commitment to environmental stewardship. Chemical inputs are minimised and water usage is carefully managed to prevent any contamination of local springs. Passionate about preserving native tree species, Eddy ensures these trees thrive across his farm, providing essential shade for the coffee plants, supporting biodiversity, and sustaining the surrounding ecosystem. The farm is a haven for local wildlife, including the iconic Quetzal, Guatemala’s national bird. The quality of the coffee produced at Finca Las Gardenias is a testament to the Lopez family’s approach to agroforestry and permaculture. This lot was harvested at peak ripeness, and was laid out on patios within 4 hours of picking to dry in the sun. After 5 days, it was transferred to African raised beds to continue its slow, controlled drying process, for a total of 22 days before heading to the dry mill for hulling.
