Description
Ethiopia, known as the birthplace of coffee, is home to some of the world's oldest and most prized varieties. On this occasion, we travel to Yirgacheffe, a district in the Sidamo region, in the south of the country, specifically to the Gedeb region, located at 2,200 meters above sea level. Most coffees grown in Yirgacheffe are indigenous, heirloom varietals, grown traditionally, with very few mechanized tasks, even during processing. Manual harvesting by local women stands out as fundamental to the industry. In July 2023, the land was purchased by Ephtah, an Ethiopian company dedicated to the export of specialty coffee, especially interested in promoting the role of women in the industry, the main driver of positive social and economic change in Ethiopia. Thanks to the association of farmers through these initiatives, better prices are achieved than when selling their coffee to local washing stations. In addition, a nursery is established so that the children of Gedeb farmers can attend while their parents are dedicated to harvesting. In addition, some female farmers in the area are members of the Ama Commitment program, an income diversification program that allows them to access more resources. In this case, this includes the construction of a water tank for flotation (removal of quakers) and an increase in drying beds. In this place, Gedeb's largest drying station, coffee processing follows the natural method. After harvesting, the beans are floated to remove quakers and then dried for 12 to 16 days. Each cup of Yirgacheffe coffee is a unique sensory experience. Its enzymatic fruity fragrance combines with a base of cacao and caramel, aromatically evoking a forest fruit yogurt, with a finish of sweet spices. It is intense, with soft acidity and a full body that makes it a treasure for specialty coffee lovers.
