Description
Joaquina Montoya Alvarado, a seasoned coffee farmer from Intibucá, Honduras, manages her 12-hectare organic farm, Finca Los Pinos, at 1650 m. Her prized Geisha plants grow at 1770 m, ripening slowly under natural forest shade. The cherries are handpicked and processed at her son’s nearby mill using eco-friendly methods—sorted, pulped, and fermented for 18–22 hours. Joaquina then carefully dries the beans in a solar dryer for 20–25 days until they reach 10–11% moisture. With over 35 years of experience, her dedication to quality and sustainability earned her 3rd place in the Cup of Excellence competition, encouraged by Ronny Gamez of RAGA Coffee and an international buyer who recognized her exceptional craftsmanship.
