**NEW in Nov 2024** **Colombia El Diviso "Ombligon"** El Diviso Farm presents a Competition Lot of the Ombligon variety, meticulously cultivated by Néstor, a second-generation coffee producer from the Brussels area in Huila. For 26 years, Néstor and his brother Adrián have been growing six different coffee varieties, including some rare species, and collaborating with other young local farmers and coffee research institutions to innovate in fermentation techniques and processes. The variety name, Ombligon, means "belly button" in Spanish, a nod to its distinctive shape. This coffee is known for its tropical fruit flavors and a robust, well-rounded body. Néstor's dedication to expanding the possibilities of coffee production has made Ombligon a catalyst for many baristas to win at international competitions. The processing of this particular lot involves using only coffee cherries with a sugar content exceeding 24° Brix. The cherries undergo 24 hours of aerobic fermentation in plastic drums, followed by 200 hours of anaerobic fermentation, and finally, an additional 80 hours of soaking fermentation with added cherry yeast. This multi-layered fermentation process, crafted by Néstor, enhances the inherent flavors of Cassis, Cherry, and Chocolate in the Ombligon variety, offering a coffee experience that varies delightfully with each brewing method.
