They have full control of their farms throughout the process and export to us.  Pacas is one of our favourite taste profiles, and coming from El Salvador originally, it may not be a coincidence we like it a bit extra from here. The pacas is delicate, almost silk and timid yet bright. This natural process of the Sibiria version of the Pasac varietal however is more jam like.  Back in 1870, Fabio Morán and Epifanio Silva decided to sow coffee trees in one of the highest summits of the Apaneca-Ilamatepec mountain range. They named the farm La Siberia for its chaotic weather conditions, along with its difficult accessibility. One century later, Rafael Silva inherited the property. It is located between 1,450 and 1650 meters above sea level. He has worked it up to be one of the best coffee producing farms in the world. A few years later he met his wife Carmen. The couple got married in their young 30s and since then they are running the business together. Carmen is very much doing everything in the back office, logistics, and marketing. The name of their company is Sicafé. In 2010, they decided to invest in their own mill called San Pedo to ensure full control over the entire coffee process. Here, they process coffee from their own farms, separated by day, lots and varietals. They also process coffee for other producers in the area. Their two sons, Rafael Gerardo and Rodrigo and their daughter Valeria are also involved in the business.  Carmen and Rafael have been winning the El Salvador Cup of Excellence for their farm La Lany in 2005, 2007, for the farm Siberia in 2010 and 2012  and for Llano Grande in 2012. And in 2017 San Cayetano won Silver in the Agenca Pour la Valoriastion des Produits Agirole. *Innehåller kaffe, förvaras mörkt och svalt. *
