Juicy and exotic coffee from the Farm series for filter coffee. Rare variety typica mejorada from Don Cayito in Costa Rica. Intense floral aromatics and tons of tropical fruits notes. Don Cayito farm is located in 2100 masl in the famous Tarrazu region (map). Ricardo Calderón has been growing coffee here since 1978. In 2009, during the micromill revolution, he built his own beneficio called Los Angeles and begun processing his own coffees. In the year 2011, he won the prestigious Cup of Excellence competition. Farm coffee series is the core of our offering. Seasonal specialty coffee lots grown and processed by producers with whom doubleshot has been fostering strong long-term relationships. Uncompromising respect to nature, people and coffee translated into final cup. Ondřej selected this coffee during his visit to the Don Cayito farm in March this year. The coffee has a strong floral aroma, a creamy body, and notes of black tea and tropical fruit. Currently, the Calderón family owns 15 farms. Ricardo´s two sons (Majkl and Diego) and two daughters (Liseth and Fernanda) help with all aspects of coffee farming. Their highest elevation farm Don Cayito is managed by Diego. Most of the coffee cherries are processed using Colombian Penagos eco-pulpers. Drying is either on traditional concrete patios or African beds. Parchment is usually stored in huge jumbo bags. Until recently, many Costa Rican producers sold the typica mejorada variety under the more marketing-friendly name geisha. Although the aroma and taste of geisha are similar, it is a different variety, related to typica. In order to clearly distinguish it from geisha, the name "typica mejorada" has been used in recent years, which translates to "improved typica". This microlot weighs just 400 kg, was harvested in March this year and processed using the white honey method. During this processing, the eco-pulper is set so that it removes maximum amount of mucilage from the cherries without the need for several days of fermentation in tanks. The aroma is distinctly scented with flowers and lavender. The taste is dominated by notes of tropical fruit. Don Cayito, resp. zpracovatelský závod Los Angeles, není už jen klasickou kávovou farmou. Rodina Calderon nedávno vybudovala přímo u vstupu do závodu kavárnu, pražírnu, cukrárnu a tréninkové centrum baristů s překrásným výhledem do údolí Dota. Do kavárny proudí o víkendu davy kávových turistů až z hlavního města Kostariky San Jose.
