Description
This coffee is produced by smallholder farmers in the Inzá municipality. Producers cultivate coffee on small parcels of land around 1700 masl located in the Tierradentro region on the western side of Cauca. About 80% of this region's population belongs to the indigenous Paez tribe, and the farms are typically between 0.5 and 1.5 hectares in size. This lot was processed using a washed technique. Harvested cherry is floated and hand-sorted to remove defects. Sorted cherry is pulped and fermented briefly for 12 hours. Parchment is dried on drying beds for around 15 days. Sourced through Cofinet, a family business of multigenerational Colombian coffee producers. Cofinet works closely with Occicafe and Globalcafe, allowing them to build direct relationships with the farmers and ensure quality control. This is our second harvest year buying this lot.
