Description
Named after Brazil’s national tree, Paubrasil reflects the skill of local farmers who use modern techniques to produce exceptional coffee, even amid environmental challenges. Grown at 800–1,300 masl in the Cerrado Mineiro region, it’s sourced from producers across nine cooperatives and six associations within the Cerrado Coffee Growers Federation. This coffee is naturally processed, with whole cherries sun-dried in thin layers. Before hulling, the cherries are finished in a mechanical drum dryer to reach a consistent moisture level of 11.5%. Sourced through Ally Coffee, Paubrasil is part of their Região do Cerrado Mineiro Designation of Origin program. Ally began sourcing in Brazil in 2013 and has since expanded to multiple origins, building lasting relationships with producers worldwide.
