Description
This lot is produced by smallholders of the Shoondhisa Kebele and then processed by Sookoo Coffee at their central location in Odo Shakiso. Sookoo Coffee is run by Ture Waji, who is becoming famous for his naturally processed coffees. Most of the cherries being delivered are one of two varieties; Gibirinna 74110 and Serto 74112. Both of these are from the Metu-Bishari selections made in the forest of the same name in the Illubabor Zone by the Jimma Agricultural Research Center (JARC). They were selected for their resistance to Coffee Berry Disease. Cherries are dried at a centralised location on raised beds for 15-20 days, weather dependent, at an elevation of 2173masl. Constant turning and moving of the cherries is practised to ensure even and precise drying. Sourced in conjunction with Osito Coffee. Starting in 2018, in Colombia, Osito has grown to source from a number of origins. In Ethiopia, Osito partners with Sookoo Coffee, founded by Ture Waji. Located in the Odo Shakiso, Sookoo Coffee is only producing naturally processed coffees with cherry sourced from surrounding villages.
