In the highlands of La Unión, Nariño, at 1,500–1,800 masl, Kenedy and his team cultivate ‘Variedad Colombia’ on El Nido, his farm. Developed by Cenicafé in the late 1970s to combat coffee leaf rust, the variety combines Caturra’s cup quality with the Timor Hybrid’s resilience. El Nido continues that legacy through careful farming and precision processing to showcase the variety’s full potential. **Processing** Only the ripest cherries are hand-picked, floated, and hand-sorted. They undergo a 30-hour underwater aerobic fermentation to intensify sweetness and clarity while preserving vibrancy. After pulping and washing, the parchment is dried slowly in parabolic dryers until it reaches 9.5–11% moisture. **Traceability** Sourced through Cofinet, who support growers with post-harvest protocols and export logistics to ensure quality and traceability from farm to roaster.
