Huipil
Tasting Notes
Description
This coffee is named after the traditional Oaxacan garment, the huipil, which means blouse or embellished dress in Nahuatl. La Mazateca, in northern Oaxaca, is home to small-scale producers with about 1 hectare of land, growing coffee among shade trees and other crops. Though not certified, their minimal-intervention approach makes this coffee fully organic. The El Huipil lot is a blend of nanolots from nearby smallholders in the area. ## PROCESSING This lot was processed using a washed technique. Cherry is manually pulped, before being fermented in wooden tanks. The coffee is washed before being fully sundried on patios, usually on top of houses. Smallholders process their coffee themselves and then sell to Ensambles as parchment. ## TRACEABILITY Sourced through Ensambles, a subsidiary of Ensambles Cafes Mexicanos, a Mexican-owned exporter and cafe. Ensambles works year-round with groups of small-scale coffee growers throughout Mexico, providing field training and support from field technicians and coordinators.
