Description
In the mountainous heart of Piendamó, Cauca (Colombia), between the inter-Andean valleys of Cauca and Patía, lies Finca El Silencio, a family project that has been growing coffee with commitment, passion, and respect for the environment since the 1970s. This farm, run by Robinson Rivera, represents the coffee tradition of southwestern Colombia, combining inherited agricultural practices with a focus on quality and traceability for the specialty coffee market. Finca El Silencio extends between 1,780 and 1,950 meters above sea level, an ideal altitude that favors slow bean development, resulting in more complex, aromatic, and balanced coffees. These unique climatic conditions, combined with volcanic soils and natural shade, contribute a special richness to the profile of each lot. Each variety grown is grown in small plots, allowing for precise control from planting to harvest. This facilitates the management of traceable microlots. The cultivation and processing practices are traditional, but carried out with a high standard of quality. The producer, Robinson Rivera, oversees every step of the process: from selective harvesting to fermentation, drying, and temporary storage. Finca El Silencio coffees undergo a wet processing process, with aerobic or anaerobic fermentation depending on the variety and the desired profile. They are then sun-dried on raised beds or canopies.
