Tasting Notes

Description

This coffee is a world exclusive to Assembly and the latest lot processed with Mió's pioneering post-harvest methods. Once picked and sorted for quality, the coffee was sealed in an oxygen-free tank to ferment for 90 hours at a controlled temperature of 38°C - a process known as carbonic maceration (often used to make wine). It was then dried in the sun and rested. The result is a flavour profile of intense sweetness, luxurious texture and plenty of complexity. Another coffee from Mió that offers a cup notably different to classic expressions of Brazilian coffee. Delicious.
