Producer: Jamison Savage / Savage Coffees. Farm: Savage Coffees. Location: Boquete, Chiriqui, Panama. Variety: Green Tip Geisha. Process: Washed Carbonic Maceration. Altitude: 1,700 - 1,800 masl. Jamison Savage is renowned for pioneering coffee processing. He uses progressive techniques and farming practices respectful of nature, allowing the coffee's natural sensory nuances to shine. His coffees are frequently chosen by national and world coffee champions. The Spectrum process begins with perfectly ripe Green Tip Geisha cherries (21-24 BRIX), twice sorted and placed in hermetically sealed stainless steel tanks for over 100 hours. CO2 is introduced, and temperature/PH are monitored to enhance fruit notes and aromatics. After washing, cherries are dried on three-tiered African beds in shaded dry houses for about 10 days until 11% moisture. They then undergo a 'reposo' seasoning process for flavor stabilization before hulling and sorting. Panama Geisha, including Green Tip Geisha, is a rare, delicate variety known for its sweet florality and citrus. Jamison's expertise with innovative processing, like Washed Carbonic Maceration, adds layers of flavor and improved mouthfeel without compromising the inherent qualities from its terroir and varietal.
