They are known for professionalism and reliability in higher-end specialty coffees. The Yirgacheffe Gedeb Processing Site processes cherries from Banko Gotiti Village smallholder farmers, situated at 1,950 to 2,300 masl. Kurume and Mixed Heirloom varieties, native to the Gedeo zone, are cultivated organically. Ripe cherries undergo careful hand-picking and flotation before a 10-12 day anaerobic fermentation in pressurized, oxygen-free containers, with strict monitoring of sugar content, temperature, and pressure. Drying takes 15-20 days to reach 11% moisture. This natural anaerobic process yields a cup character of heightened, fragrant, and sticky sweetness of tropical fruits with muted acidity, distinct from a washed process profile.
