Producer: EDN Ethiopian Coffee. Farm: Benti Nenka Smallholder Farmers. Location: Hambela, Benti Nenka Village. Variety: Kurume, 74112. Process: Natural Anaerobic. Altitude: 1,950 - 2,300 masl. EDN Ethiopian Coffee, co-founded by Michael Tseyahe in 2018, focuses on advancing Ethiopia's agricultural agenda, improving farmer welfare, and introducing innovations. They are known for high-end specialty coffees from processing sites in SNNPR and Oromia Region. The lush, mountainous Guji terrain (1,950-2,300 masl) with abundant rainfall and fertile soils provides an ideal environment. Local families use traditional, organic practices. Kurume and 74112 are native Ethiopian heirlooms known for fruity and floral qualities. Ripe cherries undergo flotation and visual assessment before 10-12 days of anaerobic fermentation in pressurized, oxygen-free containers with strict monitoring. They are then dried for 15-20 days to 11% moisture, with regular turning. Unlike washed Guji's floral notes and brightness, this Natural Anaerobic Guji Hambela offers intensified, candy-like and tropical sweetness, accented by rounded stonefruit and berry-like acidities.
