Tasting Notes
Description

Finca El Pino

Edilberto Urrego Pineda

Castillo - Washed

Colombia (Land of Diversity 2025 Auction Lot)

This is definitely the most impressive coffee of this year to us. In mid 2010s, some of those hybrid cultivars in Colombia (such as Variedad Colombia, Castillo etc) would often receive 90+ in Cup of Excellence competition while those cultivars are originally created for disease resistant coffees with some Robsuta genetic factors and we would often dream of getting those exceptional Castillo coffees.

This coffee was nominated as the finalist coffees/auction lot at a competition called "Land of Diversity" held by Fair Field Trading and we would say this coffee reminds us of those exceptional Castillo coffees that we used to be craving to get.

This coffee boasts of incredibly bold and rich body structures with a full mouthfeel, a full juiciness and a full tartness. In the cup we found rich and sweet Kyoho grapes followed by tropical flavors of guava, and complex sweet aftertaste of lavender and black currant; all those flavors are delightfully distinct.

Our tasting notes:

Kyoho grape, guava, black currant, lavender

Area: Cundinamarca, Colombia

Altitude: 1950masl

Varietal: Castillo

Process: washed

Recommended ratio: 1:18-19
